Dilli Haat: Your rendezvous with the cultural diversity of India

Mr. Amit Ghosh of the Taj Malabar Hotel in Cochin has the courage to introduce new recipes without sacrificing his guests’ pleasure. The diversity of his training from the Taj Bengal and internationally acclaimed Chef Burgess in the UK has left him with a vast knowledge of a variety of dishes.

He has the ability to integrate Caribbean, Mongolian, Lebanese and Japanese cuisine into his menus. Home Style Masala Coated Lady Fish

Murgi Ki Kadi

Ingredients
32 oz. (800gms) lady fish
4 oz. (100gms) red chilli powder
0.8 oz. (20 gms) turmeric powder
0.8 oz. (20 gms) rice flour
0.8 oz. (20 gms) gram flour
2 lemons to fry - oil, refined
0.4 oz. (10gms) salt
0.4 oz. (10gms) jeera

 

Preparation:
Marinate the fish with salt, lemon juice and keep it aside. Apply to the fish the marinade of red chilli powder, turmeric powder and jeera powder, then coat the fish with a mix of rice flour and gram flour. Deep fry and serve.


Seafood Stew

Murgi Ki Kadi

Ingredients
1 tbsp Olive oil
1 tbsp Onion/ garlic chopped
4.5 fluid ounces (150 ml) Tom sauce
15 fluid ounces (500ml) Fish sauce
1.5 fluid ounces (50 ml) White wine
1 sprig Thyme
6 oz. (150 gms) Prawns
6 oz. (150 gms) Sear fish
4 oz. (100 gms) Tasmanian salmon
6 oz Crab
4 oz. (100 gms) Mussel/clams
To taste Salt/ pepper
8 Saffron strands
1 Stick Celery
Cilantro for Garnish

Preparation:
Sweat the onion, garlic in olive oil in a pan; pour in the tomato sauce, fish stock, white wine, thyme and saffron. Simmer it for 2 minutes, and now start adding the seafood one by one. Cook until seafood is tender. Adjust the seasonings.
